It’s Slow Cooker Sunday again! Today’s meal is a delicious Chicken Parmesan Soup which is a great combination of soup and chicken parmesan! It’s hearty, comforting and a filling soup – perfect for a hungry family! If you need to stretch the soup further, add extra stock and pasta.
Let’s get started!
Toss onion and bell peppers into the slow cooker.

Add thyme, oregano, garlic powder, 3 Onion seasoning, basil, parsley, greek seasoning and rosemary. I’m using a few pinches of dried parsley and basil from our garden. The remaining seasonings, I am using a good generous sprinkle of each.

Add chicken. I’m using both boneless, skinless chicken thighs and chicken breast pieces because that’s what I needed to use up from the freezer.

Sprinkle additional seasoning over the chicken.

Add pasta sauce.
When I made pasta sauce the other night for spaghetti, I cooked my onions and bell pepper first with parsley, oregano and basil. Then I added my homemade tomato sauce. I cooked it in the slow cooker with meatballs for 6 hours. We ate up all the meatballs and I’m using the remaining sauce in the soup today.

Add water.

Add chicken stock or broth. My stock is still frozen, so I tossed it in anyways.
Place lid on and cook on high for 4 to 6 hours.

Here’s the soup after 3 hours.

Stir and add pasta.

Here’s the soup after 2 hours.

Stir.

Remove chicken and chop up. Add back to soup.


Add milk or half and half. Place lid on and cook last hour.


Sprinkle with Parmesan cheese and stir.

This soup is amazing!

Serve with homemade garlic croutons, extra Parmesan cheese and parsley.

Good generous sprinkle of thyme, oregano, garlic powder, 3 Onion seasoning, Greek seasoning, Rosemary
Few pinches dried basil – I’m using Greek Basil from our garden
Few pinches of fresh or dried parsley – I’m using dried parsley from our garden
1/2 tsp salt
Fresh cracked black pepper or a sprinkle of ground pepper
1/2 pound of chicken breast or 2 to 3 chicken thighs
2 cups pasta sauce
2 cups water
2 cups chicken stock or broth
1 cup small pasta – we are using small shells
1 cup milk or half and half
2 tbsp parmesan cheese

Toss onion and bell peppers into the slow cooker. Add seasonings. Add chicken and additional seasonings. Add pasta sauce, water and stock. Place lid on and cook on low for 8 to 10 hours or on high for 4 to 6 hours. I am cooking the soup on high. After 3 hours, stir and add pasta. Remove chicken, chop and add back to soup. Add milk. Stir. Cook last hour. Sprinkle with Parmesan cheese, stir and serve with homemade garlic croutons, extra Parmesan cheese and parsley.
Homemade Garlic Croutons
Bread or buns – we are using homemade buns
Toast bread/buns. Spread one side with garlic butter. For the garlic butter, mix in 1/2 tsp garlic powder and 1 tsp Parmesan cheese into 1/4 cup butter. Spread over bread/buns. Chop up and place on soup.
Forgot, one more thing. I had a tiny bit of heavy whipping cream kicking around, so I used that. Works perfectly, no risk of curdling. But just a tiny bit. Chicken breast worked great as the protein, cooked nice and tender.

Excellent. I forgot some of the seasonings (oops) and used celery/carrot in place of bell pepper. The whole thing got simmered on the stove so I could eat it within an hour. Even with my little goof-up it still tasted great. Making this one again for sure! (and the friends that shared it were very impressed by the flavour!)
I made ‘pasta sauce’ with leftover tomato paste, water, dried minced onion, italian seasoning, garlic powder, pinch of sugar and salt. Smelled amazing, worked perfectly!
