I have not been feeling well these past few days, (from an allergic reaction to plastic!) so today’s slow cooker recipe is a quick and easy dessert — baked apples!!
I simply love baked apples – apples filled with oats, brown sugar, cinnamon and butter baked until the apples are tender. It’s such a good, wholesome dessert – you could even have baked apples as a snack or for breakfast. Though there’s brown sugar in the oat mixture, these apples are not overly sweet and are great plain or with ice cream!
And the best part? Toss them into the slow cooker and in a couple hours, delicious baked apples are ready to eat!
Historically baked apples were a warming winter dessert, baked with wine, lemon and sugar. During the Great Depression baked apples were often served the way we prepared them today as an economical treat!
Let’s get started!
Here are our apples we bought. Our homegrown apples have been gone for a while but these apples are sweet and delicious! We are using Ambrosia apples.

Core the apples. The apple corer I have goes right through the apple, so I cored the apples right through and made the inside a bit wider. But you could use a knife to cut the middle out without going through if you like.

Next, time to prepare the filling. Combine oats, brown sugar, cinnamon and butter. Mix well. Spoon into centre of apples. Pack tightly.

Here’s the apples.

Dot with butter and sprinkle with additional cinnamon.

Pour 1/4 cup water into slow cooker. Place lid on cook on high for 2 to 3 hours. I cooked the apples for 3 hours – they were perfectly cooked!

These baked apples are delicious with or without ice cream!! They’re so good!
