It’s Slow Cooker Sunday once again! Today I am making one of our favorites – potato broccoli soup! It’s a hearty vegetable soup that takes minutes to prepare!
You can add pasta or rice to the soup if you like or any of your favorite vegetables.
Let’s get started!
Chop onion, celery, carrot and broccoli. Toss into slow cooker.

Add seasonings. I’m adding salt, pepper, seasoning salt and 3 onion seasoning.

Add potatoes and water.

I definitely need more water. I’m adding just enough water to cover the vegetables.

Add broth. I only had some frozen chicken stock, so I added that to the soup.

Add more water if needed – like I said earlier, I’m adding just enough to cover the vegetables. We’ll be adding milk later to the soup.

Stir. Place lid on and cook on low for 8 hours or on high for 4 to 6 hours.

Here’s the soup after 2-1/2 hours. The veggies are still a bit crunchy.

Here’s the soup after a total of 4-1/2 hours (two hours since I last stirred it). Stir again. Taste for seasonings.

Add milk now. Cover and let finish cooking.

I added chives, parsley, dill and the soup needed a sprinkle more of salt.

Place lid on and continue cooking for the last hour.

Soup is ready!! And so are the biscuits!

You can mix in sour cream and yogurt into the soup if you like or top the soup with shredded cheese, sour cream or yogurt and bacon. We are having the soup plain.

1 celery stalk, diced
1 carrot, diced
1 head broccoli, trimmed and roughly chopped
3 cups potatoes, diced
1/2 tsp salt
Sprinkle of pepper – I’m using fresh cracked pepper
Sprinkle seasoning salt
Sprinkle 3 onion seasoning
2 to 3 cups water
1 to 2 cups vegetable or chicken broth/stock
1-1/2 cups milk

Place lid on and cook on low for 8 hours or on high for 4 to 6 hours. Add milk in the last hour of cooking.
