It’s harvest week so we are making all things fall-time flavors! These no bake cookies are soft, tender and have just the right amount of chocolate! They are not strongly pumpkin and you could easily add cinnamon if you like. I love making no-bake stovetop cookies and these are quite delicious!
Let’s get started!
Add the butter and both sugars to a saucepan.

Once butter has melted and mixture is well mixed, add milk. Bring the mixture to a gentle boil.



Boil for 1 minute, stirring constantly.

Remove from heat and mix in the pumpkin puree and vanilla until combined.


Stir in oatmeal.

Stir for a few minutes to let mixture cool slightly before adding chocolate chips.

Stir gently so the chocolate does not melt much.

Drop spoonfuls of the mixture onto a parchment paper lined baking sheet. Let cool.




Store in airtight container in the fridge.

Pumpkin No Bake Oatmeal Cookies
1/2 cup butter

1/2 cup packed brown sugar
1/4 cup milk
1/4 cup pumpkin puree
1 teaspoon vanilla extract
1-1/2 cups oatmeal
1/2 cup chocolate chips
