Having Slow Cooker Soup Sundays were actually quite nice and I got used to having it each Sunday. So to kick off the New Year, we are simply having Slow Cooker Sundays! I’ll have an array of meals to share with you using the Slow Cooker or Crockpot.
Today, we are having Creamy Tomato Soup. Homemade tomato soup is one of my favorites, takes a handful of ingredients and it’s simple to make!
Let’s get started!
I had some canned tomatoes to use up, so I blended them up and dumped it into the slow cooker.

Rinse blender with water and pour into slow cooker.

My daughter likes to help, so she added a bit of sake but you can use vinegar, sugar, salt and pepper.

After 3 hours, we added some cream, but you can add any kind of milk you like. Place lid on and cook on high for 30 minutes.

Here’s the soup. Looks and smells yummy…and tastes even better!

Serve with biscuits, bread, crackers or anything you like. We are having cheese bread. It’s so good with the soup!

Slow Cooker Sunday – Creamy Tomato Soup
2 cups or 2 small cans diced or crushed tomatoes
1 cup water
1 tbsp sake or vinegar
1 tsp sugar
Salt and pepper to taste
1 cup heavy cream or milk
Blend tomatoes if needed. Pour into slow cooker. Add water, sake or vinegar, sugar and salt and pepper. Place lid on and cook on high for 4 hours or on low for 6 hours. In the last half hour, add cream or milk. Stir. Cover and let finish cooking. Serve with crackers or bread of choice.
