Happy Sunday! And Happy Slow Cooker Soup Sunday! Each Sunday until the end of the year, as requested, I’ll be sharing Slow Cooker Soups!
We made Potato Onion Soup in the Slow Cooker this evening… it was simply delicious! If you’re looking for the stovetop version, you can find that here!
We used onion and potatoes from the garden which makes it an economical meal. I add potatoes to onion soup to make it much more hearty.
Let’s get started!
We have a lot of onions, so I peeled them and set them in a bowl. I actually only used half of these!

Sauté onion in grease until tender. I am using lard. Add salt and pepper.

Once lightly browned, add sugar. The sugar will help brown the onions more. Stir. Let cook a few minutes.

Add flour.

Stir until flour is absorbed and slightly cooked.

Dump potatoes into crockpot, along with onions. Add bay leaves, consommé, water, wine and soy sauce. Stir well.






Cover. Cook 4 hours on high or 6 to 8 hours on low.

Stir every one to two hours if you’re able. Smells so good!

Serve 4 people hearty servings.

My family loves this soup and I make it often. So good!

Potato & Onion Soup
1 lb (about 5 cups) onions, thinly sliced
4 tbsp butter, lard or grease of choice
1 tsp salt
Fresh cracked pepper to taste
1 tsp sugar
3 tbsp flour
3 large potatoes or about 3 cups sliced potato
2 bay leaves
1 – 284ml can consommé or beef stock or beef broth
2 – 284ml cans of water
Splash dry white wine – I used a Sauvignon Blanc
Couple splashes of Soy Sauce

Dump potatoes into crockpot, along with onions. Add bay leaves, consommé, water, wine and soy sauce. Cook 4 hours on high or 6 to 8 hours on low. Serve with cheesy bread.
For the cheesy bread, I sliced a French bread in half lengthwise. Butter and then sprinkle with cheese. Bake at 350F just until cheese has melted. Remove from oven, slice and serve with soup.
