My daughters love all things potato, so for today’s Slow Cooker Soup Sunday, I decided to make Cheesy Cauliflower Potato Soup. It reminds me a bit of broccoli soup mixed with baked potato soup. It’s so good, and even better that it’s cheesy! It’s perfect for those cold winter days!
Let’s get started!
Chop cauliflower and add to crockpot. I am using riced cauliflower because I wanted to use it up from the freezer. Add diced onion. I am using 3 small shallots.

Add vegetable broth. I am using my homemade garlic veggie broth.

Add water.

Add seasonings.

Add potatoes.

Stir. Cover and cook in n low for 6 to 8 hours or on high for 4 to 6 hours. In the last hour, we’ll add the rest of our ingredients.


Add the milk.

Add cheese and butter. Add parsley and extra dill if you like. Cover and let cook for one hour on high.




This soup is delicious!! It reminds me a bit of broccoli soup.

The soup is great like this, but we like adding toppings!

Serve with sour cream/yogurt, extra cheese and cooked bacon or ham. We had our soup with fried Spam and Potato Bread — oh my gosh, this bread is divine!!

Slow Cooker Soup Sunday – Cheesy Cauliflower Potato Soup
2 cups chopped cauliflower – I am using 1 – 500g bag of riced cauliflower
1 small onion, diced
2 cups vegetable broth
2 cups water
Sprinkle salt and pepper
Pinch dill
3 cups diced potato
2 cups milk
2 tbsp butter
1 cup shredded cheese
Pinch parsley
Chop cauliflower. Add to crockpot with onion. Pour in broth and water. Add seasonings and potatoes. Cover and cook on low for 6 to 8 hours or on high for 4 to 6 hours. In the last hour of cooking, add the milk, butter and cheese. Add parsley and extra dill if you like. Serve with sour cream/yogurt, extra cheese and cooked bacon or ham.
