This is our favorite scone recipe! The scones are soft, light and flaky and are neutral in flavor so you can easily top it with anything! And they’re not overly sweet so they work with savoury ingredients too, just avoid sugaring the tops!
Let’s get started!
Combine flour, sugar, baking powder and salt together. Stir.

Crumble in butter.

Add in milk, egg and vanilla. Stir.

Flour counter. Put dough on counter.

Fold a few times to create layers.

Pat dough into a circle. Cut into 8 wedges, or cut into shapes. I didn’t really make it into a circle, more of a square, but I cut it into wedges and then I am cutting them smaller for our tea party! Place on greased baking pan. Chill 20 minutes in fridge.

Brush tops with milk.

Sprinkle with sugar.

Time to bake! Look at those layers!

Bake at 400F for 15 minutes, then bake at 375F for 10 minutes or until golden brown and cooked through. I may have left the scones in the oven a few minutes too long when I ran out to the garden!

Serve with cream cheese or clotted cream and jam. We mixed cream cheese with vanilla and a bit of sugar and topped the scone with that and jam. So delicious!
