I grew up all my life asking mom to make “carrots with orange juice,” which she got from gramma. It’s simple to make and tastes great the next day.
It’s similar to Moroccan Orange Carrot Salad which also has orange blossom water, chopped orange, salt, sugar, lemon juice and cinnamon. My Romanian gramma kept it much more simple, though adding raisins and cinnamon would be a great addition. I don’t think of it as a salad but rather just carrots with juice!!
Let’s get started!
I shredded a bunch of carrots that we got from a local greenhouse. Some to freeze, some to make carrot muffins with and some to make this orange carrots with.

Squeeze oranges for fresh orange juice. It has to be fresh orange juice!

Put shredded carrot into a bowl.

Pour orange juice over top. Just pour enough juice for the carrot to soak in but not that’s it’s drowning in the juice. You can add the pulp if you like. We did.

Stir well.

Serve chilled, as is or with a meal, although it does taste better the next day.

Orange Carrot Salad
1 cup shredded or grated carrot
Juice of 2 to 3 small oranges or one large orange
Combine shredded carrot and juice. Stir well. Refrigerate for several hours or overnight. Eat as is or with a meal.
You can add a pinch of salt, raisins and cinnamon if you like.
