If you are looking for a bread to bake that’s soft and fluffy with a lovely flavor of garlic and a little cheesy, then this cheesy garlic focaccia will be your new favorite bread to accompany any meal!
Let’s get started!
Combine water, sugar and yeast. Stir. Let sit 5 minutes until fluffy looking or foamy.

Add 2 cups of flour and salt.

Mix until dough forms.

Add cheese and a bit of flour.

Time to knead!

Knead 5 minutes or until no longer sticky but just tacky. Place in oiled bowl. Drizzle oil over dough. Cover and place in a warm place. Let rise 1 hour or until doubled in size.

Here is our dough after one hour.

Grease 9×13” pan. Press dough into pan. Let rise 30 minutes.
Today I am using my enamel cast iron pan. There’s definitely a lot of dough here, so I probably should have used a larger pan!! Hopefully it’ll turn out and be ok — it’ll probably just be a lot thicker than focaccia should be.

Here’s the dough after 20 minutes.

Dimple dough with fingers.

For the garlic oil, place 3 to 4 minced garlic cloves in a pan and add 1/4 cup oil. Heat until warmed. I am using a garlic infused oil. Brush dough with garlic oil.

Sprinkle with garlic powder or garlic salt, parmesan cheese, and chives and salt. I decided to not sprinkle the extra salt.

Sprinkle with shredded cheese if you like.

Bake at 375F for 20 to 30 minutes or until golden.

The cheese looks overcooked but isn’t – it is absolutely delicious!

This focaccia is fluffy and soft and full of garlic flavor! So good!

You can put it in a larger pan if you’d like a thinner focaccia. We like it a bit thicker so this is perfect.
