We got this recipe for traditional French Gingerbread from a friend that lives up North. She makes it every holiday season. It is different from traditional gingerbread and instead of molasses, it has honey and warming spices to create a soft, aromatic loaf that’s perfect for the holidays or with an afternoon tea.
Let’s get started!
In a bowl, combine flour, cinnamon, baking soda, and nutmeg.

Warm honey and milk slightly with butter. Heat just until butter has melted. If you are using oil, we’ll add that later.

Pour honey mixture into the dry ingredients with oil (if using) and mix until smooth.

Pour the batter into the pan.

Bake at 350F for 25 to 30 minutes or until a toothpick inserted in centre comes out clean.

It’s such a small loaf – but it’s actually perfect! A slice is the right amount of this pain d’épice!

Cool before slicing and serving.

You can also put an icing overtop the loaf. I made a brown sugar honey glaze. So good! It adds a touch of sweetness to the loaf.

It’s moist and tender – the honey makes this loaf quite unique!
