These cookies are light and flaky and remind me of shortbread crossed with gingerbread. These snowball cookies have a lovely gingerbread flavor. They’re lightly spiced and the whole kitchen fills with those warming spices as they bake. It feels like the holiday!
Let’s get started!
Cream butter and icing sugar together.

Add vanilla, salt, spices and molasses.

Stir well. Add enough flour to make a stiff dough.





Scoop dough, roll into balls and roll into icing sugar.



Place on cookie sheet.

Bake at 350F for 10 to 12 minutes or until set and lightly golden at edge.

Let cool until easy to handle and roll in additional icing sugar (powdered sugar). Place on cooling rack to cool completely.

After I dipped the cookies into powdered sugar again, I placed them on the cookie sheet so excess sugar could fall off.

Then I placed on a cooling rack to finish cooling.

12 Days of Cookies… Day 8 — Gingerbread Snowball Cookies
1 cup butter
1/2 cup icing sugar/powdered sugar
1 tsp vanilla
1/2 tsp salt
1 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/4 tsp allspice
1/8 tsp cloves
2 tbsp molasses
2 to 2-1/2 cups flour – I ended up using 2-1/4 cups
