These Cherry Bars are absolutely delicious! It’s a delicious cake base that tastes a little like a sugar cookie with cherries that reminds me of a breakfast danish! It’s so hard to describe, but it’s so good! It has those familiar flavors that makes you think you’ve had this dessert before! It is not overly sweet so the vanilla glaze brings a nice sweetness to it.
Let’s get to it!
In a medium bowl, cream together the granulated sugar and butter.

Add vanilla and icing sugar (powdered sugar) and beat until light and fluffy.

Add eggs one at a time, beating well after each addition.

Stir in the flour, one cup at a time. With the last cup, add baking powder and stir until combined.

Spread 2/3 of the batter evenly into a greased jelly roll pan (10-1/2 x 15-1/2”). I’m using a greased 9×13” pan since I don’t have a jelly roll pan.

Spread cherry pie filling over the batter.

Drop the remaining batter by teaspoonfuls over the cherry filling.

Looks delicious already!! Time to bake! Bake for 30 to 40 minutes or until a toothpick inserted in the center comes out clean.

Allow the bars to cool completely.

Looks amazing!! Is it time to eat yet?!?

Time to drizzle the glaze now that the bars have cooled. Mix the powdered sugar, milk, and vanilla extract until smooth. I decided to use water instead of milk.

Drizzle the glaze over the cooled bars.

Let the glaze set.

These bars remind me of a cherry streusel.

The drizzle is set once it’s no longer shiny.

Slice into bars and enjoy.

It’s so hard to just eat one piece!!
