I decided to try a biscuit recipe from the 1940s using whole wheat flour and they were actually quite good. These biscuits are not as airy or fluffy as my regular tea biscuits but that’s to be expected since I’m using mostly whole wheat flour. I must say though, that they’re light and flaky and absolutely delicious!
We ate these yummy biscuits with Pork Sausage Gravy and it was so good — I’d definitely make this meal and these biscuits again! These biscuits would be a great accompaniment to any soup or stew.
We got this biscuit recipe from the cookbook, Economy Recpies for Canada’s “Housoldiers” by the Canada Starch Company published in 1943 and reproduced by Forgotten Books in 2018.

I followed the recipe and did not make changes aside from adding a bit less salt and adjusting the baking temperature.
Let’s get started!
Combine flour, cornstarch, baking powder and salt.

Add in lard.

Mix until crumbly.

Add in milk.

Stir until you get a dough.

Toss onto counter and fold over until dough forms.

Keep folding to build layers in the biscuit, do not knead.

Roll out, but not too thinly or biscuits will be much more thin instead of thick and fluffy.

Cut with a biscuit cutter if you like. We always cut into squares because it’s much easier! Place on baking pan.

Bake at 350F for 25 to 30 minutes or until lightly golden. Remove from oven and let cool slightly.

Serve with butter.

Biscuits from the 1940s
1-3/4 cups flour
1/4 cup cornstarch
4-1/2 tsp baking powder
1/2 tsp salt
1/4 cup lard or shortening
3/4 cup milk
