Welcome to Day 4 of the 12 Days of Cookies! Today’s cookie is Apple Butter Cookies which are light, soft and tender with crispy edges and a chewy centre. They taste a bit like a snickerdoodle mixed with apple pie. They’re delicious! These cookies go great with tea, coffee or a glass of milk!
Let’s get started!
We did not have any apple butter so we made some first. This fall we made apple pie filling, apple pies and canned apple fruit, but no applesauce or apple butter — it’s definitely on our list of things to make next year!
To make apple butter, chop apples and stew them all day in sugar and spices. It works best in a crockpot. The longer it cooks, the apple breaks down into a puree.
I’m doing it the easy way! I’m cooking the apples in sugar and water first. Then I’m taking some out so we have some plain and I’ll spice it a bit. Then I’ll puree it in the blender and let it cool.









Cream butter and sugar together.

Add egg and beat well.

Add in apple butter, vanilla and apple pie spice. Stir well.

Add half the flour, baking soda and cream of tartar and salt. Stir well.

Add remaining flour slowly until dough forms.

Ready to roll!

Scoop cookie, roll and roll into cinnamon sugar. Place on cookie sheet. Chill for 2 hours. If the dough is too sticky, chill dough first.
We decided to turn some into thumbprint cookies and put some of the chunky applesauce as filling. After we rolled the cookies in the cinnamon sugar and filled some thumbprint cookies, I refrigerated them.







Bake at 350F for 10 to 15 minutes or until edges are set.


Let cool 5 minutes before removing from cookie sheet to cool completely.


My daughter ‘H’ decided to drizzle white chocolate over the apple filled cookies. They’re an exceptional treat!

1/2 tsp ginger
1/2 tsp allspice
2 tbsp cinnamon
1 tbsp nutmeg
1/2 tsp cloves
1 tsp cardamom – I’m not using since I’m allergic to cardamom
